Mughlai and Kashmiri dishes from India's mountainous north-western corner. "Eggplant Bharta" is creamy barbecued eggplant with sauteed onions and tomatoes. Fish Curry, Lamb tikka, Tandoori Chicken and the vindaloo are also recommended.Spicing is mild in multitudinous pilaus, biryanis, tikkas, etc, but ingridients are top notch. Try it to belive it.
