Marc Cohen and Sefi Amir opened Boucherie Lawrence in June 2013. For Marc, the butcher shop was the perfect solution to his challenge of supplying meat for their restaurant, Lawrence, located a few steps away.
Indeed, it was Marc's goal to serve sustainably raised and butchered meat from small local producers who used natural farming practices and had the welfare of the animals at heart. To be able to supply his restaurant year-round with this kind of product seemed daunting.
Opening the butcher shop proved to be an ideal solution. In this way he could more easily afford to buy whole animals, which would at the same time benefit his clients in the neighbourhood and beyond. With the relationships already developed through the restaurant, the process was simplified. Now he could afford to buy whole animals and pass on the benefits to his customers, making the prices very competitive considering the high quality standards offered at the butcher shop.
