Bananas Foster is a beloved New Orleans dessert created in the 1950s at Brennan's Restaurant. This healthy, low-fat pineapple variation, in which the fruit is sautéed in butter, rum and brown sugar and then flambéed, will bring raves.

Ingredients:

  • 1 large ripe pineapple
  • 15 ml (1 tbsp) unsalted butter
  • 45 ml (3 tbsp) packed light brown sugar
  • 1 ml (1/4 tsp) ground nutmeg
  • 45 ml (3 tbsp) dark rum
  • 30 ml (2 tbsp) orange liqueur
  • 300 g (1 1/3 c) vanilla nonfat frozen yogurt
  1. Cut off leaves and stem end from pineapple. Remove skin and "eyes." Slice pineapple into rings 1.5-centimetre (3/4-inch) thick. Cut each slice into thirds and remove hard core.
  2. In large skillet, melt butter over moderate heat. When butter begins to foam, add brown sugar and nutmeg, and heat until sugar melts. Stir in rum and bring to a simmer.
  3. Add pineapple and cook, turning often, until the pineapple is warmed through, about 4 minutes.
  4. Leaving skillet on heat, drizzle orange liqueur over pineapple.
  5. Standing back, ignite liqueur with long match. Shake pan gently until alcohol burns off. Spoon pineapple slices and sauce over frozen yogurt.
