A quick recipe for the super healthy carrot

It is no myth that carrots help you to see in the dark, thanks to their high level of beta-carotene, which the body converts to vision-enhancing vitamin A. Yet carrots offer much more — cell-protecting properties for great-looking skin, plenty of fibre to aid digestion, and because they are low in fat and calories, they make a perfect healthy anytime snack. Here is a side dish recipe to try involving the healthy orange vegetable.

A quick recipe for the super healthy carrot

Honey-Braised Carrots with Baby Peas

Preparation 5 minutes

Cooking 12 minutes

Serves 4

Ingredients:

  • 450 g (1 lb) whole baby carrots
  • 15 g (1 tbsp) butter
  • 15 ml (1 tbsp) olive oil
  • 44 millilitres (3 tablespoons) hot vegetable stock
  • 2 g (1/2 tsp) grated nutmeg
  • 22 ml (1 1/2 tbsp) honey
  • 240 g (1 c) frozen baby peas
  • 15 g (1 tbsp) snipped fresh chives

Instructions

  1. Place whole baby carrots in a pot and add butter, olive oil, hot vegetable stock, grated nutmeg and honey. Bring to a simmer, cover and cook for eight minutes, or until carrots are just tender.
  2. Add frozen baby peas to the pan and heat through for one to two minutes. Serve the carrots garnished with snipped fresh chives.

Cook’s tips

  • If baby carrots are not available, use large ones and cut them in half widthwise and lengthwise.
  • Serve as a side dish with roast beef or venison to complement their rich meat flavours.
