A sweet, blood sugar friendly berry dessert recipe

Made with a healthy dose of berries and stone fruits, this dessert bursts with flavour, yet contains surprisingly few calories and no fat. It's a great way to satisfy your sweet tooth while maintaining your blood sugar levels.

A sweet, blood sugar friendly berry dessert recipe

Ingredients

  • 50 ml (1/4 c) orange juice
  • 15 ml (1 tbsp) lemon juice
  • 45 ml (3 tbsp) sugar
  • 2 medium nectarines, pitted and cut into 2.5 × 1-cm (1 × 1/2-in) pieces
  • 3 medium plums, pitted and cut into 2.5 × 1-cm (1 × 1/2-in) pieces
  • 250 ml (1 c) fresh blueberries, rinsed
  • 250 ml (1 c) fresh blackberries, rinsed
  • 30 ml (2 tbsp) frozen orange juice concentrate
  • 2 ice cubes, crushed 125 ml (1/2 c) nonfat vanilla yogourt
  • Mint sprigs for garnish

Directions

  1. Combine the orange juice, lemon juice and sugar in a large bowl. Stir to dissolve the sugar. Gently stir in the nectarines, plums, blueberries and blackberries.
  2. Transfer 175 millilitres (3/4 cup) of the fruit and juices to a blender. Add the frozen orange juice concentrate and ice cubes to the blender and blend until smooth.
  3. Scrape the purée into the bowl containing the remaining fruit. Stir gently to combine.
  4. To serve, ladle the dessert bowls and garnish each serving with a dollop of yogourt and a mint sprig.

Chef's tips

  •  This dessert is best served chilled. If you have time, cover and refrigerate the for at least one hour before serving.
  • To crush ice cubes, place them in a resealable plastic bag, seal. Smash with a rolling pin or saucepan.
