Chicory salad with sour cherry vinaigrette

Chicory Salad

Radicchio, frisée and Belgian endive are all forms of chicory. These bitter greens benefit from a sweet salad dressing, and why not start with fruit preserves to make it? And, fresh Parmesan cheese cut into matchsticks adds just the right amount of salty spark.

Preparation time 10 minutes

Serves 4

You'll need

  • 150 ml (2/3 c) Sour Cherry Vinaigrette (recipe below)
  • 1 small head radicchio (225 g/8 oz), cut lengthwise into eighths and sliced crosswise
  • 2 small heads Belgian endive (225 g/8 oz), halved lengthwise and chopped crosswise
  • 50 g (2 oz) frisée50 g (2 oz) Parmesan cheese, cut into matchsticks
  1. Putting it all  together
  2. Put the vinaigrette in a medium mixing bowl.
  3. Add the radicchio and endive to the bowl and toss to coat.
  4. Divide the frisée among four salad plates.
  5. Spoon the radicchio, endive and any dressing remaining from the bowl over the frisée.
  6. Top with the Parmesan.

Chicory salad with sour cherry vinaigrette

Sour Cherry Vinaigrette

Just the thing for bitter greens, this vinaigrette begins with sour cherry preserves. In addition to chicory salad, try it on arugula or broccoli rabe.

If you're splurging, it also makes a delicious topping for baked brie cheese.

Preparation time 5 minutes

Makes 150 millilitres

Gather the following:

  • (2/3 cup)22.5 ml (1 1/2 tbsp) raspberry vinegar or red-wine vinegar
  • 45 ml (3 tbsp) walnut oil or extra-virgin olive oil
  • 100 g (2/3 c) sour cherry preserves
  • 2 ml (1/2 tsp) Dijon mustard
  • 1/2 garlic clove, minced
  • 1 ml (1/4 tsp) salt
  • 0.5 g (1/8 tsp) ground black pepper
  • 15 g (1 tbsp) chopped fresh basil
  1. Put the vinegar in a medium mixing bowl and whisk in the oil in a thin, steady stream until incorporated.
  2. Whisk in the preserves, mustard, garlic, salt, pepper and basil.

Use immediately or refrigerate for up to two days.

Pour and enjoy!
